Riesling with a black bean cod — What a Combo!

The other night I was feeling adventurous and decided to grab some cod; not a fish that I normally cook with. I proceeded to chop up some shallots, and feeling the need for some more protein, I ventured through my cupboards for a can of black beans. I combined the black beans and the shallots with olive oil, cumin, white pepper and sea salt. Placing the bean concoction on some tin foil, the cod fillet followed with a sprinkle of Creekside Estate Riesling. I had some left over spaghetti squash that I thought would round off the meal quite well. We sat down to dinner with our bottle of Riesling and this rustic fish dish and enjoyed every morsel. The Creekside Riesling was harvested from a specific vineyard in Beamsville, called Butler’s Grant; the aroma’s just jump out of the glass with fleshy pear and citrus aroma’s, truly teasing your mouth before the first sip. Because of the abundance of fruit, the perceived sweetness is high, even-though the sugar code is listed as 1. The sweet flesh of the cod and the squash compliment this wine and further bring out the vibrant tropical fruits on the palate. Definitely a must try for everyone.
