Italian Comfort Food

I would have to say that Italian Food is by far my favourite comfort food. I have a few recipes that I make very well, including a great red sauce and stuffed shells. I recently made my signature shells and stuffed them with dried cottage cheese, spinach, pepper and parmesan cheese. Both my husband and I enjoyed it thoroughly; this is one dish that never has any left overs. I will post the recipe if there is any interest in receiving it; let me know. Of course, wine is always a welcomed companion, especially when it is cold and dismal outside. We paired the dish with a 2001 Ca’linverno from Verona, Italy. I would usually pair this wine with an Osso Bucco, but I was in the mood for a big, but elegant wine that evening. This wine is made from a few grape varieties; Rondinella, Corvina, Cabernet and Croatina. You get a sweet liquorice and cherry aroma on the nose with strikingly well balanced acids and tannins and an impeccably smooth finish. For the taste and the quality of this wine, the price is a steal; $17.95 from Vintages.
