COSCO Calendar Dinner

Over the weekend I picked up a great recipe calendar from COSCO, and last night I decided to make one of the recipes. I made Turkey Cutlets in Tarragon Cream Sauce with Pancetta…Very yummy, but next time I will substitute the regular chicken broth with the low sodium version as it was a little bit salty. I paired it with a white wine from Italy, Masi Pinot Grigio & Verduzzo; it was a nice accompaniment, because the wine cleansed my palate very nicely after each mouthful, so the salt didn’t seem as overpowering; the dish may have worked better with a Chardonnay; I will try that next time. For those of you who are unfamiliar with the Verduzzo grape variety, it is a grape variety found in the Friuli region in Northern Italy. It is like a chameleon; changing from late harvest to dry. In the case of this combo, it is used in a dry style, taking on more of a light-bodied approach…Nice easy drinking wine with some acid from the Pinot Grigio and some astringency from the Verduzzo.
